The winter chill has set in so oily rag households have the wood-burning stoves stoked up and the slow cookers brewing warm meals.

An oily rag family up north said although the power was out for three days during a recent storm, they cooked delicious low-cost meals on their wood-burning fire using a cast iron casserole dish. Slow cooking is not only a lifesaver in times of emergency, it's also a great way of making tasty winter meals using the cheapest cuts of meat.

Carol from Tauranga writes: "Always look at the price per kilo when buying meat -- not the total price on the pack. Take into account whether it has the bone in or out. You get a good deal when the price per kilo is under$10."

As a general guide, the cheapest (to highest) cuts of meat are as follows: sausages, mince, gravy beef, blade steak, corned silverside, rolled roast, rump steak, barbecue steak, wiener schnitzel, sirloin, scotch fillet, and fillet steak.

We think you can't go past chicken for excellent value. At about $5 a kilo for frozen chicken pieces, it's about half the cost of mince, which is generally the cheapest red meat.

Here are some low-cost slow-cooking recipes from readers.

M.M. has this fantastic recipe her mum used to make. "It's cheap, quick and delicious and is now a family favourite in my home. This recipe also freezes really well, so you can make it in advance or freeze the leftovers.

Ingredients:

Chicken legs and/or thighs

Large tin of tomato soup

Large carrot, sliced

10 mushrooms, chopped in chunks

Large brown onion, thinly sliced

1 tbsp dried mixed herbs

Place the ingredients in a casserole dish, mix, and then place the lid on the dish. Cook in a moderate oven for about 45 minutes to an hour. I usually stir it after 30 minutes to mix it all through. Serve with rice and beans or peas.

"Mum used to coat the chicken pieces in flour and brown them before placing in the casserole dish. However, as a busy mum myself, I skip this step and it turns out just fine. It is such a hearty meal, you will all love it!"

And here is a versatile minced meat casserole that can make use of almost anything left over in the fridge. "Put any of the following ingredients, in layers, in an ovenproof dish, pie dish or casserole. Minced meat (beef, lamb, hogget, pork, chicken, rabbit or possum) plus a mixture of any of these: sliced onions, chopped bacon or ham pieces, grated carrot or pumpkin, drained tinned tomatoes, finely sliced raw potatoes, frozen peas, beans or corn, odd bits of shredded cabbage or cauliflower (not broccoli as it goes a funny colour).

"You may like to try sprinkling sunflower or pumpkin seeds between the layers. A pinch of sage over pork, a sprinkle of rosemary over hogget or a smear of prepared mustard or horseradish sauce over beef is very tasty. Pour over the casserole a mixture of 2 cups of warm water, leftover gravy or tomato juice, with salt and pepper to taste, about a tablespoon of either tomato, Worcestershire, plum or black bean sauce and the same amount of vinegar. Bake gently in a covered dish at 160C for 90 minutes. Delicious with crusty bread and a green salad."

If you have a favourite recipe or oily rag tip that works well for your family, send it to us at www.oilyrag.co.nz, or by writing to Living off the Smell of an Oily Rag, PO Box 984, Whangarei, and we will relay it to the readers of this column.

First catch your tuatuas (there's a daily limit per person); couple of hours soaking in freshwater to spit out the sand; steam gently to open (otherwise they turn into bits of yellow and red rubber); mix tuatua meat with egg, milk, black pepper, chopped red onion, handful of finely chopped coriander or parsley and enough pea flour to make a chunky batter - into the hot oil, drain on paper towels - lemon wedges, crusty bread (ciabatta), green salad, a nice reisling. After lunch return shells to the highwater mark.

A tip I picked up from Hugh on the River Cottage cooking programme was to add about a spoonful of salt to the water that you've got the tuatuas soaking in - it will make them disgorge their sand faster.

Jamie Oliver's cheeky manner, constant use of the word 'pukka', and down to earth personality have won him legions of fans around the world. He has sold millions of cookery books, opened a restaurant, starred in several TV shows and revolutionised UK school dinners.

He was born May 27th, 1975 and brought up in Clavering, Essex, where his parents, Trevor and Sally, ran a pub called 'The Cricketers'. It was there that the young Jamie began to cut his teeth as a chef and would practice daily in the kitchen and by the time he was 11, the young protégé could cut vegetables as well as any of the kitchen staff. He later attended Newport Free Grammar School and left at age sixteen with two GCSE qualifications going on to attend Westminster Kingsway College, formerly Westminster College. He then earned a City & Guilds NVQ in home economics.

His first foray into the cheffing industry was as a pastry chef at Antonio Carluccio's Neal's Yard restaurant, where he first gained experience with preparing Italian cuisine, and developed a relationship with his 'mentor' Gennaro Contaldo. Oliver then moved to The River Café, Fulham, as a sous chef.

Also around this time he began attending the Westminster Catering College at the age of 16. Later, he worked in France, immersing himself in the culture and learning as much as he could before returning to London. His first job back was working for Antonio Carluccio as Head Pastry Chef at The Neal Street Restaurant.

Here Jamie worked alongside Gennaro Contaldo (of 'Two Greedy Italians' fame), who Jamie considers one of his mentors. After The Neal Street Restaurant, Jamie worked 3 1/2 years at the famous River Cafe in London, a position that would change his life forever. It was here, Jamie says, where he learned "all about the time and effort that goes into creating the freshest, most honest, totally delicious food." Not only that, it was also during his time at the River Cafe that he was noticed by the BBC in 1997 after making an unscripted appearance in a documentary about the restaurant, "Christmas at the River Cafe". That year, his show The Naked Chef debuted and his cookbook became a number one best-seller in the UK. That same year, Oliver was invited to prepare lunch for then Prime Minister Tony Blair at No. 10 Downing Street!

In July 2000, Oliver married former model Juliette Norton. The couple met in 1993 and have four children: Poppy Honey Rosie Oliver (born 18 March 2002), Daisy Boo Pamela Oliver (born on 10 April 2003), Petal Blossom Rainbow Oliver (born on 3 April 2009) and Buddy Bear Maurice Oliver (born on 15 September 2010).

In 2000, Oliver became the face of the UK supermarket chain Sainsbury's through an endorsement deal worth $2 million a year. After 11 years the partnership between Oliver & Sainsbury's ended. The final television advertisement was for Christmas 2011.

Oliver created Fifteen in 2002. Each year, fifteen young adults who have a disadvantaged background, criminal record or history of drug abuse, are trained in the restaurant business. Oliver conceived and established the Fifteen charity restaurant where he trained fifteen disadvantaged young people to work in the hospitality industry. Following the success of the original restaurant in London, more Fifteens have opened around the globe: Fifteen Amsterdam opened in December 2004, Fifteen Cornwall in Newquay opened in May 2006 and Fifteen Melbourne opened in September 2006 with Australian friend and fellow chef Tobie Puttock.

In 2005, he initiated a campaign called "Feed Me Better" in order to move British schoolchildren towards eating healthy foods and cutting out junk food. As a result, the British government also pledged to address the issue. Delving into politics to push for changes in nutrition resulted in people voting him as the "Most Inspiring Political Figure of 2005," according to a Channel 4 News annual viewer poll.

Oliver then began a formal campaign to ban unhealthy food in British schools and to get children eating nutritious food instead. Oliver's efforts to bring radical change to the school meals system, chronicled in the series Jamie's School Dinners, challenged the junk-food culture by showing schools they could serve healthy, cost-efficient meals that kids enjoyed eating.

Jamie is represented in London, England by Useful Talent.

My name is Irvin Lin and I’m a writer, recipe developer, designer, photographer and self-taught baker. I went to school for painting and English lit, and immediately realized that I had no actual “real world skills” when I graduated. Luckily, while working at an alternative non-profit art gallery in St. Louis, I started to design some of the in-house printed calendar of events and brochures. During that time I took some classes on graphic design and eventually moved out to San Francisco just in time for the dot-com bust 13 years ago (ahhh…the days of web 1.0).

Of course, at the same time I was designing, I was also baking. I’ve been baking since I was 9 years old, constantly making cookies and cakes whenever I could. The magic that comes from putting together seemingly random raw ingredients and creating delightful treats still astonishes me to this day. As I moved from job to job, the one constant I had was that I would bake whenever I had a chance.

As this blog took off, and I started to get more freelance design projects and food writing gigs, I took a leap of faith in September of 2010 and finally quit my day joy where I worked as a senior designer for a shop that specialized in restaurant and retail design. Ultimately that particular place wasn’t a good fit and I’m looking forward to where life takes me next.

As of this moment, I’m happy baking up a storm, writing this blog and patching together a living via numerous freelance gigs, whether it’s freelance food writing, designing for small artisan food companies and blogs, recipe developing projects, a random desert pop-up selling contraband baked goods, and occasionally working with brands. Some would call me a jack of all trades, but I’d just like to think of myself as well rounded.

I’ve spoken at a few blogging conferences, including BlogHer Food 2011, where I co-lead a session on branding/design for food bloggers and moderated a session on bring blogs to the mobile space. I also spoke at the 3rd Annual Foodbuzz Fest on social networking and the importance of social media for bloggers. I’ve had the honor of judging a number of food competitions, including the Taste TV Chocolate Salon, the 18 Reasons DIY Crazy Dessert competition and the Eat Real Festival: Jams, Preserves & Marmalade category. I also co-host the 18 Reasons DIY Dessert Quarterly events.

I’ve written or contributed work to the US MasterChef magazine, Blackboard Eats, SF Weekly’s SFoodie Blog, Bay Area Bites, Huffington Post and Rama Tours/Crimson Bamboo. I’ve developed recipes for Attune Foods, Alexia Foods, and Peanut Butter & Co. If you’d like to learn more about my freelance writing, receive samples of my professional work or are looking for a a recipe developer please feel free to email me.

If you’d like to learn more about my graphic design skill set, feel free to visit my portfolio site at jackhonky.com. I’ve worked with some big name brands, including Ben & Jerry’s, IHOP, Wendy’s, Quiznos, as well as smaller artisan companies.

I do occasionally work with brands that I believe in. I always disclose to my readers when I do this. If you would like to discuss building a relationship with me, feel free to email me at eatthelove {at} gmail {dot} com and let’s start a dialogue. I’m happy to send you a media kit.

Finally, if you’d like to connect with me outside of this blog or email, feel free to follow me on Twitter, Facebook or Google+. Just be forewarned I social network a whole heck of a lot. This may explain why my Klout score is a ridiculous 57.
