When I was growing up there were only two types of vinegar. We sprinkled malt on our fish and chips (yum!), while Mum used white when poaching eggs, in salad dressings - mixed with olive oil sold only in small bottles at the chemist's - and for pickles.

No-one then could have predicted how much the demand for vinegars would grow - much as it did for olive oil.

As well as malt (derived from barley malt) and white (distilled alcohol), the array includes red and white wine, balsamic (drawn from trebbiano grapes), cider, rice wine, sherry, chardonnay and champagne, plus those infused with herbs (such as tarragon) or fruit (such as raspberry).

Made by fermenting dilute alcoholic liquids by commercial or traditional methods, the shelf price of most vinegars is a good guide to quality. But the rich, concentrated flavour of "luxury" brands means you need less.

I use ordinary white in quantity for pickling, for example, and good wine- based varieties for salads. When a sharp sweetness is called for, balsamic does the job.

Aged vinegars are great for deglazing a pan for a sauce (let vinegar sizzle then stir in a knob of butter and a splash of wine or stock), and most types can be used to accent a dish (cider vinegar with a pork and apple casserole, say) or define a marinade.

Essential for bearnaise sauce, making your own tarragon vinegar is a snip. Put plenty of bruised tarragon leaves in a jar of white-wine vinegar. Cover, leave to infuse for 2-3 weeks and strain into a clean bottle before using. Add a splash to a salad or your next chicken casserole!

A dash of vinegar in the cooking water also brightens the flavour of rice, fish, corned beef and pickled pork.

I have adapted today's recipe from The Goodness of Vinegars, by John Midgely (Random House, 1994). The chicken breasts do not dry out and the charred, tangy flavour is superb. Great with homemade wedges - any root vegetable will do - and salad.

Flatten chicken breasts moderately with a rolling pin or bottle.

Pierce all over with a sharp knife and place in a large glass or china bowl.

Combine marinade ingredients and pour over chicken, tucking the fresh herbs between the breasts.

Cover bowl and refrigerate for 12-24 hours (the longer the better), turning the chicken a few times to distribute marinade evenly.

Lift chicken from marinade, hold over bowl to drain excess liquid and transfer to a plate.

Barbecue over a medium heat (or grill under a medium-high heat) for 7-8 minutes, flip over and baste once with a little marinade.

Continue cooking for another 7-8 minutes, or until skins are lightly charred and centres are cooked.
