When a group of my college friends invited me and my daughter for a weekend at their cabin near Crystal Mountain, I figured I better contribute something to the meal plan.

The feedback I got on the chili I threw together was pretty great. More than one friend got up for that second and third bowlful of chili.

In preparation for my epic one-person chili cook-off, I brought all the canned ingredients up north, and a pound of lean ground sirloin already thawed. The next morning I got up and put the chili recipe together.

Here's the chili recipe that you'll have people asking for over and over again. My crew ended up having it for lunch and around a campfire later that day, and again at dinner.

Ingredients:

1 lb. of ground sirloin
1 8.8-ounce pouch of Uncle Ben's Ready Rice-Brown Rice
2 10-ounce cans of Ro-Tel diced tomatoes with green chilies
1 15-ounce can of kidney beans
1 15-ounce of white beans
1- 26-ounce (family size) can of tomato soup
2 packets of powdered chili seasoning
1 tablespoon of brown sugar
1 teaspoon of chili powder
1 large onion chopped
Salt and pepper to taste
A little olive oil for browning meatballs
Optional toppings: Shredded cheese and tortilla chips. Sour cream is also a delicious topping choice.
Directions:

Make 90-second rice and pour it in bowl. Add raw ground beef and half a packet of the chili seasoning. Knead the meat mixture together. Form small, tight meatballs. Heat skillet drizzled with olive oil until it's nice and hot.
Carefully add the meatballs to the skillet. Let them brown. Turn off heat and let them rest in pan.
Open cans of diced tomatoes, both beans, tomato soup. Rinse all beans. Dump all canned ingredients in crock pot. Add a half cup of water.
Next add remaining packet and a half of chili seasoning, brown sugar, chili powder. Stir together well. Add chopped onion.
Drain grease off meatballs and add them to the crock pot. If you prefer thinner chili broth, add more water. If you like it thicker, leave it alone. The juices will mingle and it will thin out on its own.
Give the entire crock pot full of goodness a nice couple of stirs, but be careful not to knock the meatballs around.
Cover and let cook on low for up to 8 hours. Then turn to "warm" and let it continue to simmer as long as you'd like.
Serve hot when ready. Top with shredded cheese and tortilla chips. Sour cream and hot sauce aren't bad topping choices either.

With all due respect to vegetarians, Fourth of July grub at my house has to hit several key criteria.

It must be meaty. It must be bold. It must pair nicely with beer and wine and cocktails. It must easily feed a crowd. It must be easy to prepare. It must be easy to eat outside. And did I mention it has to be meaty?

Which is why my July 4 gatherings always involve an array of burgers and sausages and hot dogs, as well as some assortment of steak tips and pulled pork. All big and bold and meaty and do-ahead-easy.

But this year I wanted to throw something new into the mix, something that still hit all my must-haves, but that's a little outside the usual. And that's how I came up with this recipe for sweet-and-tangy chili grinders. It's a basic beef and bean chili with a rich-and-sweet sauce that's spooned onto slabs of baguette, then topped with cheese.

What I particularly like about this recipe is that the chili can be prepped the day before, then simply reheated just before serving. And since I already have the grill going for the rest of the meal, I like to assemble the grinders, then set them over the flames for a few minutes to toast the baguette and melt the cheese.

In a blender, combine the Peppadews, red peppers, tomato paste, onions, Worcestershire and sugar. Blend until smooth, then set aside.

In a large pot over high, heat the oil. Working in batches to avoid crowding the pan, add the beef and cook until browned on all sides. Use a slotted spoon to transfer the beef to a plate while browning the next batch. When all of the beef is browned, return it to the pot.

Pour in the blended sauce, kidney beans, jalapenos, cumin, cinnamon, garlic powder, chili powder and smoked paprika. Bring to a simmer, then reduce heat to medium-low. Partly cover the pot and cook for 1 hour. Taste a piece of the beef; it should be fork tender. If not, continue cooking until the beef is tender. Season with salt and pepper.

Cut each baguette in half crosswise, then split each half lengthwise. Spoon the chili into each baguette half, then top with cheese.
